On her website, The Hungry Girl often features recipes for her “Egg Mugs.” I have always been a little skeptical about them, but also intrigued. After all, Hungry Girl has won me over several times with an odd-sounding recipe that turned out delicious (Creamy Broccoli Slaw with Chicken, anyone?). Unfortunately, the Egg Mugs do not fall into that category.

 

Over the past week, I tried two different variations of the Egg Mug: the Egg Mug Classic and the Egg Mug Lorraine. I had a carton of Eggbeaters around thanks to the Meat Cupcakes I made last weekend, so it seemed the perfect time to try these recipes.

 

To sum it up: I did not like them. They did not look appetizing, and they did not taste good. The Egg Mug Lorraine slightly edged out the Classic in terms of taste (bacon truly makes anything taste better), but it still topped out at 1.5 stars (the Classic earned only 1).

 

The Egg Mug is one of those diet-sounding recipes that tastes like diet food. I would much rather prepare breakfast in the morning with my free-range organic brown eggs than with something like Eggbeaters. The extra time it takes is well worth it.

 

Egg Mug Classic

¾ cup fat-free egg substitute
1 wedge The Laughing Cow Light Creamy Swiss cheese

1. In a large microwave-safe mug (I used a bowl) sprayed with nonstick spray, microwave egg substitute for 1½ minutes.

2. Mix in cheese wedge, breaking it into pieces. Microwave for 1 minute, or until set.

Yield: 1 serving. 3 PointsPlus.

 

Egg Mug Lorraine

½ cup fat-free egg substitute
1 TB precooked real crumbled bacon
1 tsp dried minced onion
½ tsp Dijon mustard
1 wedge The Laughing Cow Light Creamy Swiss cheese

1. Spray a large microwave-safe mug with nonstick spray. Add all ingredients, breaking cheese wedge into pieces. Stir well. Microwave for 1 minute.

2. Stir and microwave for 1 more minute, or until set.

Yield: 1 serving. 3 PointsPlus.
